Achali / Pickles

Achali ya KarotiThis is not your regular pickle recipe, but is good enough to satisfy those sudden cravings.
Every country has different recipes for pickles. Majority of those who prepare pickles in Tanzania, prefer to add hot peppers; In Tanzania, pickles must be places in direct sunlight for a week or two before serving, but this is not your regular pickle recipe, because you need only few hours. The best part is, no boiling, no hassles of caring the bottle in an out to the sun for weeks. This is a simple recipe to enjoy with your beer or cocktail. Actually, it is a good vegetable snack.

Hii sio achali yako ya kawaida, ni maandalizi yanayoweza kutosheleza hamu yako ya vitu vichachu kwa haraka, na pia ni nzuri kwa afya yako.
Kila nchi ina mapishi yake ya kutengeneza achali. Watu wengi wanaotengeneza achali Tanzania wanapenda kutumia pilipili. Lazima achali iwekwe nje kwenye jua kwa muda wa wiki moja au mbili kabla haijatumika, lakini haya si mapishi ya kawaida kwa sababu unahitaji masaa machache tu. Kitu cha maana ni kwamba, hakuna kupika, ama shida za kubeba chupa ndani na nje kwenye jua kwa muda wa wiki chache. Haya ni maandalizi marahisi kwa ajili ya beer au kokteli. Pia ni kitafunio kizuri sana cha aina ya mboga.
Karibu

Carrots

  • 140g /5 0z Peeled carrots
  • 1/3 cup Vinegar / lime juice
  • 1/3 cup Water
  • 1 tsp Salt
  • 1 tsp Chopped habanera pepper

Cucumber

  • 140g /50z Peeled cucumber
  • 1/3 cup Vinegar / Lime juice
  • 1/3 cup Water
  • 1 tsp Salt
  • 1 tsp Chopped habanera pepper
  1. Cut cucumbers and carrots about four inches long
  2. Arrange the vegetables flat in separate containers.
  3. Add the remaining ingredients in each container.
  4. Cover and let stand for 3 hours.
  5. Remove the liquids and serve.

Good for cocktail and beer.

Karoti

  • Gramu 140 Karoti zilizo menywa
  • Kikombe 1/3 Siki / maji ya ndimu
  • Kikombe 1/3 Maji
  • Kijiko cha chai 1 Chumvi
  • Kijiko cha chai 1 Pilipili mbuzi zilizo katwa katwa

Matango

  • Gramu 140 Matango yaliyo menywa
  • Kikombe 1/3 Siki / maji ya ndimu
  • Kikombe 1/3 Maji
  • Kijiko cha chai 1 Chumvi
  • Kijiko cha chai 1 Pilipili mbuzi zilizo katwa katwa
  1. Kata matango na karoti kama urefu wa inchi nne.
  2. Panga hizo mboga vizuri kwenye bakuli mbali mbali.
  3. Ongeza viungo vilivyobakia kwenye kila bakuli.
  4. Funika acha viungo vikolee kwa muda wa masaa matatu.
  5. Toa maji, weka mezani.

Too Much Frying

I remember receiving a mail from a friend, asking me why there is too much frying in my recipes (Click here to go through my recipes). He thought that frying too much is not good for ones health.

It is hard to run from oils if you are African? Spanish from Spain and Asians fry a lot, and they are among the healthiest people on earth. There is something in Spain Called tapas, most of these tapas are oily and the Spanish love it. Still, there are healthier people in Spain than in America. Chinese also loves their stir fry. How come majority of them are healthy?

It is not about frying, is about your life style. I am not going to abandon my African recipes for boiled American recipes for any reasons. Ladies in East Africa; when you meet with your friends for daily gossip. Please you will gain a lot if you do your gossip while walking in groups instead of sitting at home talking while snaking.

It also depends on what you mean, by overweight or unhealthy; there are people with big bone structure, and they tend to look overweight, but are strong and healthy. This could be because they do a lot of physical activities during the day. Many of these people can be found in our African villages. Yes, I do believe we should watch what we eat, but do not blame on oil; Blame bad nutrition, ready prepared food from your store, canned foods and lack of physical activities.

I do eat a lot of oily foods and I am in good shape. This is because I do exercise a lot. I do not use my car all the time. I take time to walk. I take time to jump rope with my daughter. All these small things add up to your physical strength. Try it before you blame oily food.
