Chatini Ya Ukwaju / Tamarind Chutney

Maelezo mafupi kutoka kwa Miriam. Maitha (Mkenya anaeblog kwa kiswahili), amenitumia hii chatini. Nimeijaribu na saladi na nimeipanda sana sana. Pia ni rahisi kutengeneza. Mimi nimetumia ukwaju wa makopo ambao ni sawa tu na ukwaku uliotoka mtini leo. Kama wewe uko nchi za nje, Utapata ukwaju wa makopo kwenye maduka yeyote ya Kithai, Kichina na Kiafrika. Mapishi yanayofuata ni kama alivyoandika Maitha.

This is a little note from Miriam. Maitha ( A Kenyan Swahili Blogger), sent me this nice recipe. I tried it with salad and I loved it. Very simple. I used natural canned tamarind paste which teste just like fresh tamarind. If you are abroad, you can find Tamarind in Thai, Chinese or African stores. Enjoy; The following is written by Maitha.

Chatini ya Ukwaju- Tamarind Chutney

SWAHILI
Mchanganyiko huu sijui nitauitaje , nilifanya kufundishwa na dadangu , jina la karibu kabisa tuseme ni chatini ya ukwaju .
Huwa napendelea kuutumia badala la tomato sauce au hata vinegar japo mpaka sasa huwa nashindwa kuchagua kati yake na balsamic vinegar .
Na ule wakati ambapo mwezi huwa umekaa vibaya na hamna hela za kununua Worcestershire sauce basi huwa najistiri nao pia

- Ukwaju
- Tangawizi mbichi
- Pilipili mbichi
- Kitunguu Saumu
- kitunguu maji ( si lazima vile )
- Dhania au Rosemary kwa mbali

Hakuna mpangilio wowote ni kutwanga na kukoroga kila kitu na kuchanganya pamoja na rojo la ukwaju ambao huwa umelowekwa nadani ya maji kwa muda wa masaa kama mawili hivi .
Chatini hii pia huwa nzuri ikitumika kama salad dressing

ENGLISH
I do not know what name to give the following recipe, given to me by my sister, I think I can call this recipe Tamarind Chutney.
I prefer to use this instead of Ketchup or vinegar. I can not tell the difference between this and balsamic vinegar; and during those tough days when I can not afford Worcestershire sauce, I use this.

-Tamarind (fresh)
-Fresh Ginger
-Fresh pepper
-Fresh garlic
-Onions (optional)
-Cilantro or Rosemary (a pinch)

No formality, just crush all ingredients in mortar and mix with tamarind.
This recipe is also good as salad dressing.
