Kuhusu Vibibi-About Vibibi

Many countries around the world tend to know the history of most of their recipes. I would like that to happen in Tanzanian or Africa in general. It is also as important as the history of other issues in our country. As a Tanzanian I feel it is not enough, if I only know when Tanzania got independence, or knowing my culture and etc. I feel that, I am a package of many things, and those things make me a Tanzanian. One of those things is what I eat, how I eat it and to find the story behind what I eat.

Few weeks ago, Liz from Japan read about Vibibi on this blog. She added a comment that Vibibi (known as rice dumpling in Japan) also Japans’ favorite. I thought it was a good chance for me to ask her about the history of Vibibi, and that I would love to learn the history of some of Tanzanian recipes. She was very kind to translate the post in English for people to understand. Now Tanzanians will know that vibibi travelled all the way from China. But there is still more to find, who introduce the recipe in East Africa! I wonder what our Professional chefs will say

Nchi nyingi duniani wanajua historia ya mapishi yao. Ningependa pia Tanzanian au Afrika tufanye hivyo. Historia ya mapishi ni kitu cha maana kama historia ya mambo mangine ya nchi yetu. Kama Mtanzanian ,sitafurahi eti kujua tu lini tulipata Uhuru, au kujua Utamaduni wangu na mengineyo. Naamini kuwa kuna mambo mengi kwa ujumla yanayonifanya niwe Mtanzania. Kitu kimojawapo kati ya mambo hayo ni ninachokula, jinsi ninavyokula, na kujua hicho ninachokula kina asili ya wapi.

Wiki chache zilizopita, Liz kutoka Japan alisoma kuhusu mapishi yangu ya vibibi. Akaacha maoni kuwa vibibi (Ambavyo Japani vinajulikana kama Rice Dumpling) pia vinapendwa sana Japani. Nikaona ni vizuri kutumia nafasi hiyo kumuuliza kuhusu historia ya vibibi na mapishi mengine ya Tanzania. Kwa Roho yake nzuri, akatafsiri kwa Kiingereza ili tuelewe. Sasa Watanzania tunajua kuwa vibibi ni mapishi yaliyoanzia China. Lakini bado hatujajua ni nani yaliye leta mapishi haya Tanzania! Hivi wapishi wetu wakuu watasemaje.

VIBIBI / Tanzanian Rice Balls

Vibibi are one of Tanzanians favorite sweets, mainly prepared during Ramathan. The other country that we share this recipe with is Thailand which they call this recipe rice balls. I can not guess how rice balls were introduced from Thailand to Tanzania. The Persians must have something to do with this because is the favorite of Muslims during Ramathan along the coast of Tanzania.
There is only one type if rice balls in Thailand which uses rice flour, but there are two types of vibibi in Tanzania. One type can be called in English rice balls, and another is flour balls. Flour balls is the same as rice balls but use all purpose flour instead of rice flour, but other ingredients remain the same. Today, I will introduce you to Vibibi / Tanzanian rice balls. Karibu. In Tanzania, it is not clear if vibibi and vipopoo is the same thing. My mother told me there is a difference between the two. Some Tanzanians say vibibi and vipopoo is the same thing. The names differ only if you came from Mainland (Tanganyika) or Islands (Zanzibar and Pemba). This is one thing that I still have to look into. You must try this recipe it is nice.

Vibibi ni kati ya vitamutamu vingi kutoka Tanzania, ambavyo vinatayarishwa sana wakati wa Ramathani. Nchi nyingine inayotumia mapishi haya ni Thailand ambayo wanaita rice balls. Wala siwezi nikabuni vibibi vili tambulishwaje Tanzania toka Thailand. Lakini nafikilia watu wa Uajemi ndio walileta, maana vibibi vinatayarishwa sana wakati wa Ramathani na Watanzania wanaoishi katika miji ya pwani .
Kuna aina moja tu ya mapishi ya vibibi nchini Thailand ambayo yanatumia unga wa mchele. Lakini kuna aina mbili ya vibibi Tanzania. Aina moja inatumia unga wa mchele na aina ya pili inatumia unga wa ngano. Viungo vya mapishi haya ya vibibi ni sawa kasoro aina moja inatumia unga wa mchele na aina nyingine inatumia unga wa ngano. Leo nitawaonyesha mapishi ya vibibi vya unga wa mchele. Bonyeza hapa kusoma mapishi hayo.

Watu Tanzania hawaelewi kama kuna tofauti kati ya vibibi na vipopoo. Mama aliniambia kuwa kuna tofauti kati ya vibibi na vipopoo. Watanzania wengine wanasema kuwa vibibi na vipopoo ni pishi moja. Majina yanatofautiana kama mtu ametoka Bara au visiwani. Hili ni jambo ambalo ningependa kuchunguza zaidi. spice

Kuna mapishi ya vyakula vitamu vingi Tanzania, na hii ni moja wapo. Lakini siwezi kuwaeleza mapishi haya yalianzishwa lini Tanzania. Lakini tunaweza kuhisi yaliletwa na watu wa Kiajemi kama vyakula vingine vya Tanzania. Kuna mapishi tofauti ya Kashata, mapishi haya ni rahisi kupika na pia ni vizuri ukila kama kitindamlo na kahawa ya rangi bila sukari.
Kawaida maji hayatumiki kupika kashata, lakini zinakuwa ngumu baada ya muda. Nimeamua kutumia shira ya sukari ili kashata ziwe laini wakati wote.
Kinachochekesha ni kwamba, nilivyokuwa mtoto, nilikuwa napenda kashata za rangi ya waridi, na mbaka leo napika kashata za rangi ya waridi tu! Bonyeza hapa kusoma mapishi ya kashata.

There are quite a few sweet recipes from Tanzania, this is one of many. The only problem is that, I can not tell you how and when kashata was introduced in Tanzania. We can just guess it is a Persian influence just like many other recipes. Not to forget, Tanzania has many varieties of Kashata. This is very simple, and taste better with strong black coffee without sugar.
Usually, water is not used at all, but it becomes hard. So I decided to make sugar syrup so that kashata can stay soft all the time.
The funny part is that, when I was a child, I only liked pink kashata, and until today, I only make pink kashata!
