Aioli sauce is a mayonnaise-like sauce that is popular in the Mediterranean. It is made with garlic, olive oil, lemon juice, and egg yolks.
Sauce for seafood.
Separate yolks and wisk yolks with mustard andgarlic in a bowl.
Add oil drop by drop,beating continuously until halfof oil is used.
Add lemon juice a little at a time and remaining oilstill beating.
Season with salt and pepper.
Serve as dip for shrimp or sauce over fishsuch as sole, flounder, or halibut.
