This Apricot Nut Bread recipe is a quick and easy way to make a delicious and healthy snack. This bread is made with whole wheat flour, dried apricots, and chopped nuts. It is perfect for breakfast or an afternoon snack.

 2 1/2 c Flour
 2 ea Egg whites
 1 c Sugar
 ¼ c Orange juice
 1 1/2 tb Baking powder
 4 ts Grated orange peel
 ½ ts Lite salt or less or none
 ¼ c Pecans,chopped
 3 tb Oil
 10 ea Halves dried apricots
 ½ c Skim milk

Chop the halves of large dried apricots(no preserv.

)Preheat oven to 350 degrees.

Lightly oil and flour 9-by-5-inch loaf pan.

Measure all ingredients into large mixerbowl; beat on medium speed 1/2minute, scraping bottom and sides of bowl constantly.

Pour into pan.

Bake35 minutes to 45 minutes or until a wooden pick inserted in center comesout clean.
