Ardishoky Bil Furun – Artichokes In The Oven Recipe

This is the best recipe for roasted artichokes, no joke. They're simple to make, bursting with bold flavors from fresh ingredients, and a crowd favorite! Our veggie bowl has been mysteriously stocked since moving to Barcelona.

 200 g Artichoke hearts (frozen)
 55 g Minced meat (beef, lean)
 ¼ Onions
  tbsp Pine seeds (fried)
  tsp Arabic mixed spice (or All Spice)
  tsp Salt
  tsp Black pepper
 ½ cup Water
  cup Lemon juice
 1 tbsp Sunflower oil

On high heat, fry the chopped onions with half the sunflower oil until translucent. Keep stirring so they don’t burn.

Add the minced meat, half the salt and all the black pepper and Arabic mixed spice and fry until the meat becomes brownish. Keep moving the meat around and separate it into small pieces. You will notice the meat releases water, don’t let it all evaporate.

Fry the pine seeds in some sunflower oil on high heat until golden. Keep stirring them so they don’t burn. Then add the pine seeds, without the oil, to the minced meat and mix.

Heat the water and stir in the lemon juice, remaining sunflower oil and salt. Sprinkle with black pepper and mix (optional, to taste). Set the mixture aside. Tete Hiba’s Tip: If you have some homemade vegetable or meat broth at home, use that instead of the water.

Line the artichokes in an oven safe dish and using a teaspoon put some of the meat mixture on the top of each artichoke.

Using a tablespoon, put some of the lemon mixture on top of the meat of each artichoke. Be careful not to let the minced meat fall off the artichoke. Then slowly add the remaining water mixture into the oven safe dish (enough to cover about ¾ of the artichokes). Cover with foil and place in the oven until cooked (about 1 hour 15 minutes).
