When combined with home fries, scrambled eggs, and olive oil, these fried potatoes and eggs make a quick breakfast for two.

TO FRY THE POTATOES
 250 g Potatoes
  tsp Salt
 Sunflower oil
TO MAKE THE EGGS
 ¼ Onions
  tsp Salt
  tsp Black pepper
 5 ½ Eggs
 ¼ tbsp Milk (full fat)
 ¼ tbsp Sunflower oil

Add the salt to the potato cubes and mix well. Heat the sunflower oil on high and deep fry the potatoes until they are golden in color, then place them on a plate with paper towels to absorb the excess oil. (Make sure the potatoes are dry before frying.)

Whisk the eggs together with the salt, black pepper, and milk.

Using a wide, non-stick pot, fry the chopped onion in sunflower oil on high heat until soft.

Add the fried potatoes to the onions and mix, followed by the whisked egg mixture and mix again. Keep stirring until the eggs are cooked to your liking.
