Beacan Bruithe is an Irish recipe for baked mushrooms. The mushrooms are first sauteed in butter, then baked in a white sauce. They can be served as a side dish or as a main course.

 16 x Large field mushrooms
 4 oz Sausage meat
 4 oz Chopped onions
 1 ts Chopped sage
 4 oz Whole wheat breadcrumbs
 1 x Salt and pepper

Wash and peel mushrooms.

Remove stalks and discard.

Brush mushrooms withmelted butter.

Fry onions in remaining butter.

When tender, mix onionand butter with breadcrumbs, sausagemeat, herbs and seasonings.

Divideamong the mushrooms.

Place mushrooms in a shallow ovenproof dish, pour 4tablespoons of water into the bottom of the dish, and bake for 15-20minutes in a moderate oven.
