Burak Bil Jibneh – Cheese Spring Rolls Recipe

Crispy Cheese Rolls are a quick but delectable appetizer that are made with spring roll wrappers and stuffed with cream cheese and mozzarella.

 4 Spring roll pastry squares (frozen)
 60 g Akkawi cheese (lightly salted, or mix halloumi and mozzarella)
  cup Thyme (chopped, 'Zaatar' in Arabic)
 ¼ Eggs
 Sunflower oil

To make the filling, mix together the cheese, thyme, and egg.


Place the filling mix next to you along with a bowl with a little bit of water (will to be used to roll). To roll the burak: - Place some of the cheese mix onto the pasty square - Start by folding the corner over the filling and roll once - Fold in the side corners - Continue to roll tightly (but careful not to tear the pastry) - To close the burak, put your finger in some water and dab the edge.


Heat the oil on high then lower to medium. Fry the burak until golden brown on all sides and place on a plate with paper towels.
