Cashew brittle is a type of candy made from sugar, butter, and cashews. It is typically hard and crunchy, and can be made in a variety of ways. The most common method is to cook the sugar and butter together until they form a caramel, then add the cashews and stir until they are coated. The mixture is then spread onto a baking sheet and left to cool and harden.

 3 c Sugar
 2 c Cashew halves
 1 c Light corn syrup
 1 1/2 tb Butter
 ½ c Water
 1 1/2 ts Vanilla

Place sugar, water and corn syrup in a sauce pan.

Stir over medium highheat to dissolve sugar.

Continue cooking, without stirring, until mixturereaches 280 degrees on a candy thermometer.

Add cashews.

Continue cookinguntil mixture reaches 300 deg f (hard crack stage).

Remove from heat andadd vanilla and butter.

Stir to mix well.

Pour onto greased baking pan.

When cool, break into pieces.
