Cheddar cheese straws are a type of cheese cracker made with cheddar cheese, butter, and flour. They are typically baked in the oven and served as a snack or appetizer.
Using a pastry blender, food processor or two knives, cut butter intoflour until very finely crumbled.
Stir in cheese.
In a small bowl, mix eggyolk and water.
Stir into flour mixture.
Knead dough until smooth.
Wrapdough in plastic wrap.
Chill at least one hour before rolling out.
(Atthis point dough can be frozen for later use).
Heat oven to 375 deg f.
Roll Chilled dough out to 1/4 inch thickness.
Cut into 1/4 x 4 strips.
Place strips on ungreased baking sheet.
Bake 12 to 15 minutes or untillightly browned.
Transfer to serving platter and serve while hot.
Makes about 6 dozen straws.
