Chocolate Chip PancakesIngredients:1 cup all-purpose flour2 tablespoons sugar2 teaspoons baking powder1/4 teaspoon salt1 cup Egg Beaters2 tablespoons butter, melted1 teaspoon vanilla extract1/2 cup chocolate chipsDirections:1. In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, whisk together Egg Beaters, butter, and vanilla. Add the wet ingredients to the dry ingredients, and mix until just combined. Stir in chocolate chips.2. Preheat a griddle or frying pan over medium heat. Grease with butter or cooking spray.3. For each pancake, scoop 1/4 cup batter onto the griddle. Cook for 1-2 minutes per side, or until golden brown. Serve with butter and syrup.

 3 c ALL PURPOSE FLOUR
 2 tb SUGAR
 3 c BUTTERMILK
 ¼ c MELTED BUTTER
 1 ts BAKING SODA
 1 oz CHOCOLATE CHIPS
 2 ts BAKING POWDER

BEAT EGGS; ADD BUTTERMILK.

SIFT FLOUR, SODA, BAKING POWDER, SALT AND SUGARBLENDING WELL; ADD TO EGG MIX; ADD MELTED BUTTER; MIX WELL.

DROP BYSPOONFUL ONTO LIGHTLY GREASED GRIDDLE AND BROWN ON BOTH SIDES TILL DONE.

(GRIDDLE SHOULD BE MEDIUM HIGH HEAT).

HINT:: TO MAKE BUTTERMILK; ADD 1TABLESPOON LEMON JUICE (REALEMON BRAND).

THESE PANCAKES ARE VERY GOOD MADEWITH EGG BEATERS EGG SUBSTITUTE.

NOTE SPRINKLE CHOCOLATE CHIPS OVERTOP OF PANCAKE WHILE COOKING FIRST SIDE.
