Cranberry Bread Recipe

Cranberry bread is a type of quick bread that is made with fresh or frozen cranberries. It is usually sweetened with sugar and often has a streusel topping. Cranberry bread can be made into muffins, loaves, or even biscuits.

 2 c Whole wheat flour
 3 ea Egg whites
 2 ea Oranges
 2 c Sugar or less
 2 c Unbleached white flour
 ½ c Chopped nuts
 1 ts Baking soda
 ¼ c Canola oil
 1 ts Baking powder
 2 c Cranberries,ground or sliced

Preheat oven to 325.

Grate the rind of the oranges and reserve.

Cutoranges in half and squeeze out the juice.

Add enough boiling water tojuice to make 1 1/2 cups liquid.

Combine juice and rind with all otheringredients.

Place in two lightly oiled 9-by5-inch loaf pans.

Bake for 1hour or until wooden pick inserted in center comes out clean.
