Cucumber Salsa Recipe

Ingredients:1 cucumber, peeled and diced1/2 red onion, diced1 red bell pepper, diced1/4 cup chopped fresh cilantro1 jalapeno pepper, seeded and diced1 lime, juiced1 tablespoon white vinegar1 tablespoon olive oilSalt and pepper to tasteDirections:1. In a large bowl, combine cucumber, red onion, red bell pepper, cilantro, jalapeno pepper, lime juice, white vinegar, olive oil, salt, and pepper.2. Refrigerate for at least 1 hour before serving.

 1 c Yogurt; Plain
 ¼ c Parsley; Snipped
 ¼ c Cilantro; Fresh, Snipped
 1 ts Cumin; Ground
 ½ ts Salt
 2 ea Cucumbers; Medium

Cucumbers should be pared, seeded and coarsely shredded.

~Mix all ingredients.

Cover and refrigerate until chilled, about 2 hours.
