In a large bowl, combine cucumber, red onion, red bell pepper, cilantro, jalapeno pepper, lime juice, white vinegar, olive oil, salt, and pepper.2. Refrigerate for at least 1 hour before serving.
Cucumbers should be pared, seeded and coarsely shredded.
