There are many recipes for carrot cake, but Emily's may be this one:Ingredients:1 cup vegetable oil2 cups sugar3 eggs1 teaspoon vanilla extract2 cups all-purpose flour2 teaspoons baking powder1 teaspoon baking soda1 teaspoon salt2 teaspoons ground cinnamon3 cups grated carrots1 cup chopped pecansInstructions:1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.2. In a large bowl, combine oil and sugar. Beat in eggs and vanilla. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Gradually add to the wet ingredients, mixing until everything is well blended. Stir in carrots and pecans.3. Pour batter into prepared pan.  2 c whole wheat pastry flour
 1 c sunflower oil
 2 ts baking powder
 4 ea eggs
 1 1/2 ts soda
 2 c grated carrots
 2 ts nutmeg
 ½ c diced pineapple
 1 ea pinch salt
 1 tb vanilla
 ½ c maple syrup
 1 c nuts chopped
 ½ c honey
 1 1/4 c Cream Cheese Frosting

Combine dry ingredients; set aside.

Combinesyrup, honey, oil, eggs,carrots, pineapple, vanilla and nuts.

In three additions, add dryingredients to carrot mixture, mixing after each.

Pour into 5 x 9-inchloaf pans or a 9 x 13-inch baking dish.

Bake at 350 degrees for 35-40minutes.

Let cool and frost with Cream Cheese Frosting.
