The Fattoush Salad is a common entrée on Middle Eastern dinner tables. a straightforward salad of chopped vegetables with a lime vinaigrette.

 ¼ Tomatoes (large)
 ½ Lebanese cucumbers
 10 ½ Lettuce (leaves)
  cup Mint (chopped)
  cup Parsley (chopped)
 ¼ Onions
 ½ Radishes
 ¼ Garlic cloves
  cup Arabic bread (cut in squares, also called Pita bread)
 ¼ tsp Salt
 Black pepper (to taste)
 ¼ tbsp Sumac
 ¼ tsp Sugar (white)
  tbsp Olive oil
  tbsp Lemon juice
  tsp Pomegranate molasses ('Dibs Rumman' in Arabic)
 Sunflower oil

To fry the pita bread, heat some sunflower oil in a pan – make sure it’s hot. Add the bread and fry until golden brown. Keep stirring so they fry evenly on both sides. Then place them on a plate lined with paper towel to absorb the excess oil. (If you prefer you can toast the bread in the oven.)

To make the dressing, mix together the garlic, lemon juice, pomegranate molasses, black pepper, salt, sugar, olive oil, and sumac. Leave a bit of sumac on the side to use later.

Put all the vegetables in a bowl, add the dressing and mix well.
