Fiesta Meatloaf is a recipe that includes ground beef, chili powder, cumin, garlic, and onion. It is baked in the oven and served with a salsa or chili sauce.
Saute onion, pepper, and celery, in butter, until tender.
Stir in chilisauce.
Combine 1/2 cup sauce mixture with all other ingredients.
Form intoa loaf in a shallow baking pan.
Bake at 350 deg f for 1 hour.
Let standfor five minutes before slicing.
serve remaining sauce over meatloaf.
