Frijoles Refritos (Refried Beans) Recipe

Frijoles refritos, or refried beans, are a traditional dish from Mexico. The beans are cooked until they are soft and then mashed with a fork or a potato masher. They are then fried in a pan with oil and spices. Frijoles refritos are typically served as a side dish, but they can also be used as a filling for tacos or burritos.

 2 c Cooked beans
 3 tb Lard or bacon drippings
 ½ c Grated longhorn cheese

Heat lard or bacon drippings in frying pan or saucepan.

Add beans, mash andsimmer for 5 minutes.

Top with cheese and serve when melted.

NOTE: thisalong with green chili and/or salsa is a great burrito filling.
