A funnel cake is a deep-fried batter cake that is coated with powdered sugar and often served with fruit or whipped cream.
Mix together the eggs, milk, and vanilla.
Sift together the flour, saltsugar and baking powder.
Add dry ingredients to milk mixture.
Stir to mixwell.
Heat oil to 370 degrees (be sure it is hot or the cakes will absorbto much oil).
Pour batter from a small pitcher, making loops and crossingover batter.
Fry up to minutes - turn and brown well.
Drain on papertoweling.
Sprinkle with powdered sugar.
Makes about ten cakes.
