Giblet Gravy (For Poultry) Recipe

Giblet gravy is a savory gravy made with the giblets (heart, liver, and gizzard) of poultry. It is typically made with chicken or turkey giblets, but can also be made with duck or goose giblets. The gravy is typically made by simmering the giblets in water or chicken broth until they are cooked through. Once cooked, the giblets are chopped or ground and added to the gravy. Wash thoroughly the liver, gizzard and heart and cover with water and cookuntil tender.

Drain off the water and save.

Chop the giblets fine.

Pour offmost of the fat in which the poultry has been cooked, leaving about 4 Tbspof it in the pan.

Add 3 Tbsp of flour and blend well.

Measure the gibletwater adding enough water to make 3 cups.

Pour slowly into the brownedflour, stirring constantly until mixture thickens.

Add giblets and cook fora few minutes.

Season with salt and pepper and serve.
