There are many different recipes for gingerbread waffles, but they all generally follow the same basic ingredients and method. The most common ingredients in gingerbread waffles are ginger, cinnamon, allspice, nutmeg, molasses, and brown sugar. Some recipes also call for dark corn syrup, baking soda, and flour. The batter is usually made by whisking together the dry ingredients before adding the wet ingredients and mixing until smooth. The waffles are then cooked in a waffle iron until golden brown.

 1 c Molasses
  c Butter or butter substitute
 1 1/2 ts Baking soda
 1 Egg, well beaten
 2 c Cake flour
 2 ts Ginger
 ½ ts Salt
 ½ c Sour milk

Put butter and molasses in saucepan and heat to the boiling point. Remove from fire and beat in baking soda. Add milk and egg. Add dry ingredients which have been sifted together. Mix well. Bake in hot waffle iron. These are delicious served hot with whipped cream and a sprinkling of nutmeg.
