Ingredients:1 lb. carrots, peeled and cut into thirds2 Tbsp. honey1 Tbsp. butter1/4 tsp. salt1/8 tsp. black pepper1/4 tsp. dried thymeInstructions:1. Preheat oven to 375 degrees.2. In a large bowl, combine all ingredients.3. Transfer to a baking dish and bake for 15-20 minutes, until carrots are tender.4. Serve immediately.

DRAIN AND RETURN TO LOW HEAT AND ADD MARGARINE,STIRRING TO MELT.

COMBINE HONEY, JUICE, GINGER AND ZEST AND ADD TO PAN.

INCREASE HEAT SO THAT GLAZE WILL REDUCE, STIRRING OFTEN.

DUST EACH SERVINGWITH PARSLEY OR MINT IF DESIRED.
