Kaak Bil Yansoon – Aniseed Cookies Recipe

Try these straightforward star anise and white wine cookies. Excellent dipped in Vin Santo or with a cup of tea or coffee.

  cup All purpose flour (white)
  tbsp Aniseed (seeds, 'Yansoon' in Arabic)
  tbsp Sesame seeds (golden, 'Simsim in Arabic')
  cup Sugar (white)
  tsp Baking powder
  tsp Bicarbonate of soda (also called Baking Soda)
  tbsp Olive oil
  tbsp Sunflower oil
  tbsp Water

Put the flour in a bowl and make a hole in the center. Add the olive oil, sunflower oil and sugar and mix well.

Mix in the remaining ingredients and knead for 10-12 minutes. Then cover the bowl with a cloth and let it sit for half an hour in a warm place such as a cupboard.

Turn the oven on to 180C so it’s preheated and ready for baking. You can make the cookies can be made into any shape you like. To make the traditional crescent shape, first put some dough into your hands and make a ball. Then roll the ball in your palms to make a cylinder. Bend the cylinder into a half circle, place in the baking tray, and press down on the top of the dough. Bake the cookies on 180C until cooked and golden (about 40 minutes).
