Ingredients:1 tablespoon olive oil1 onion, diced3 cloves garlic, minced1 pound potatoes, peeled and diced6 cups chicken or vegetable stock1 bunch kale, tough stems removed, leaves choppedSalt and pepper, to tasteOptional toppings:Shredded Parmesan cheeseCrumbled baconSour creamDirections:Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the potatoes and stock and bring to a boil. Reduce the heat to low and simmer for 15 minutes.Add the kale and cook until wilted, about 5 minutes. Season with salt and pepper, to taste. Serve with Parmesan cheese, bacon and sour cream, if desired.

* Garlic Sausage should be the smoked kind, cooked and sliced.

Peel and chop potatoes. Combine with vegetable oil and water. Cook for 20 to 30 minutes or until potatoes are tender. Remove potatoes and reserve liquid. Mash potatoes through a sieve and return to potato liquid. Add salt and pepper and simmer for 20 minutes. Wash kale discarding all tough leaves and cut into shreds. Add to potatoes and cook for 25 minutes. Add sausage. Simmer gently for 5 minutes.
