Good feta and tahini — the latter is a must; we keep tahini on hand at all times. And this recipe was inspired by a few leftover beets and my love of tahini. That is all you require.

INGREDIENTS
¾ Beetroots
¾ Garlic cloves
¼ tbsp Yoghurt (full fat)
¾ tbsp Sesame seed paste ('Tahini' in Arabic)
¼ tsp Salt
¾ tbsp Lemon juice
⅓ tbsp Olive oil
INSTRUCTIONS

Put all the ingredients together in a food processor and blend until smooth, stopping to scrape the sides one or two times.
