INGREDIENTS

 150 g Apricot paste sheets ('Qamar al Deen' in Arabic)
 8 ¼ Dried apricots (soft)
 2 ⅛ Dried prunes (soft)
  tbsp Raisins (red)
  tbsp Raisins (golden)
 ¾ tbsp Pistachios (raw, crushed)
 ¾ tbsp Almonds (raw, halved)
 1 ⅓ tbsp Pine seeds (raw)
 2 ⅛ cup Water
 1 ⅓ tbsp Corn flour
 Water
 Sugar (to taste)
 5 ½ tsp Orange blossom water ('Mai Zahir' in Arabic)

INSTRUCTIONS

Put the apricot squares in a pot with hot water and stir occasionally. While the apricot is dissolving, soak the dried fruits together in one bowl, and the pistachios, almonds and pine seeds in separate bowls. Make sure to use room temperature water and let them soak for about 15 minutes.

Once the prunes and apricots have softened, cut them into medium sizes pieces and remove any seeds. The raisins, nuts and pine seeds just need to be drained from the water they were soaking in.

Dissolve the cornstarch in a bit of water and add it to the apricot paste mixture, then bring to a boil on high until all the apricot paste has melted and thickened - stir occasionally. Taste and add sugar if needed. The apricot paste is usually quite sweet, but taste it to see if you’d like to add some sugar.

Now lower the heat to medium and add the raisins, prunes and apricot pieces. Let simmer for 3 minutes stirring occasionally.

Add half the pine seeds and half the almonds and let simmer for 3 minutes while stirring occasionally. Then add the orange blossom water, stir and remove from the heat.
