FOR THE MARROW
 250 g Marrow (also called Courgettes, 'Koosa' in Arabic)
 ¼ Onions
  tsp Salt
  tsp Black pepper
 1 tbsp Olive oil
FOR THE EGG MIXTURE
 2 ¾ Eggs
  tsp Salt
  tsp Black pepper
 ¼ tbsp Milk

TO PREPARE THE EGG MIXTURE Whisk together the eggs, milk, salt and black pepper and set aside.

TO FRY THE MARROW Fry the marrow in the olive oil on high heat until it turns pinkish brown and is slightly cooked - stir while frying so it doesn’t burn. Once done, put the marrow to a plate but make sure to keep any excess oil in the pan.

In the same pan, using the oil left over from frying the marrow, fry the chopped onion on medium heat until translucent. Add a pinch of salt while frying.

Add the fried marrow and mix, then add the salt and black pepper and mix again.

Add the whisked egg mixture and keep stirring until the eggs are cooked.
