?A latke is a fried potato pancake, traditionally served as part of the Hanukkah celebration. The word "latke" is derived from the Yiddish word for "pancake," and the dish is also sometimes referred to as a "potato pancake."

 2 lg Baking Potatoes
 1 tb Onion, grated
 1 Egg
  c Flour
 1 c Vegetable Oil
 Lowfat Yogurt
 Applesauce

Peel and grate the potatoes onto paper towels. Squeeze out the moisture. Combine the potatoes and the remaining ingredients, except the yogurt and applesauce. Beat well.

Heat the oil in a skillet. Drop the batter into the oil by spoonfuls. Fry until crisp and brown on both sides. Remove from the skillet and drain on paper towels. Serve warm with plain yogurt and unsweetened applesauce.
