Lowfat Molasses Cookies Recipe

A lowfat molasses cookie recipe is a cookie recipe that uses molasses as the primary sweetener, instead of sugar. These cookies are often made with whole wheat flour, and are lower in fat than traditional molasses cookies.

 ¾ c Raisins
 2 ts Baking soda
  c Water, hot
 1 ts Cinnamon
 1 c Sugar
 1 ts Ginger
 ¼ c Molasses
 ½ ts Cloves
 1 ea Egg // or 2 egg whites
 ¼ ts Salt
 2 1/4 c Flour
 ¼ c Sugar

Cook Time: 12Cholesterolper serving: 4mg In a food processor bowl with a metal blade,combine raisins and hot water.

Cover; process 2 to 3 minutes or untilpureed.

In a large bowl, combine raisin mixture, 1 cup sugar, molasses andegg; blend well.

Lightly spoon flour into measuring cup; level off.

Stir inflour, baking soda, cinnamon, ginger, cloves and salt; mix well.

Cover withplastic wrap; refrigerate 2 to 3 hours for easier handling.

Heat oven to 350F.

Shape dough into 1-inch balls; roll in 1/4 cup sugar.

Place 2 inches apart on ungreased cookie sheets.

Bake at 350F for 8 to 12minutes or until set.

Cool 1 minute; remove from cookie sheets.

HIGH ALTITUDE - Above 3500 feet: Decrease sugar to 3/4 cup.

Note: I keep my hands slightly wet when shaping cookies so the doughdoesn't stick to my hands.
