This gourmet jam, which will go well with a meat and cheese board, is made with fresh Mission figs and walnuts that have been simmered in honey, cinnamon, and cloves.

 400 g Dried figs (soft, chopped)
 ½ cup Walnuts (raw, chopped)
 ¾ cup Sugar (white)
 ¾ tbsp Aniseed (ground, 'Yansoon' in Arabic)
 5 ½ tbsp Sesame seeds (golden, 'Simsim in Arabic')
  cup Water
 3 ¼ tbsp Lemon juice

Roast the sesame seeds by placing them in a pan on high heat. Once their aroma starts being released and they start changing color, lower to medium heat and stir until they look toasted. Then roast the walnuts in the same way.

Place the sugar, water and lemon juice in a pot and bring to a boil on high heat. Then lower the heat to medium and let simmer uncovered until it becomes slightly syrupy (about 10 minutes).

Add the figs and mix well. Put the heat back on high and let it come to a boil, then let it simmer on low heat until it becomes thick (about 10 minutes).

Add the aniseeds, sesame seeds, and walnuts. Mix and let simmer for about 2 minutes. Remove from the heat, pour into sterile glass jars and seal.
