?Midwestern pork loaf is a dish made with ground pork, bread crumbs, and seasonings. It is typically baked in an oven and served hot.

 ¾ pound finely chopped ham
 1 1/4 pounds lean ground pork
 3 slices white or whole wheat bread
 ½ cup milk
 2 eggs, slightly beaten
 ¼ teaspoon pepper
 ¼ teaspoon salt, optional
  Cracked pepper, coarsely ground
  Orange slices, for garnish, optional

 1 cup freshly squeezed orange juice
 2 tablespoons brown sugar
 2 teaspoons cornstarch

1. In a large bowl, combine the ham and pork. Add the bread which has been broken up into crumbs and soaked in milk.

2. Mix in eggs, pepper and salt, if used. With a spoon, mix together until the mixture is light and well blended.

3. Shape into an oval loaf, about 10 inches long and 6 inches wide. Sprinkle generously with cracked pepper.

4. Bake at 350 degrees for 1 1/4 to 1 1/2 hours. Remove to a serving platter.

5. Garnish with orange slices if desired. Slice and serve hot from the oven or at room temperature, or cold.

Variation: Pork Loaf with Orange Glaze

In a saucepan, combine the juice, brown sugar and cornstarch. Bring to a boil. Stir until slightly thickened. Brush top of ham loaf with glaze during baking.

Good served with corn pudding or buttered corn or corn on the cob, mashed potatoes, a green salad or relishes, if desired. Serve with sparkling apple juice.
