Mnazalet Batata – Potatoes With Minced Meat Recipe

I enjoy eating potatoes in all of their preparations, including baked, fried, boiled, steamed, stewed, and grilled. My mother frequently makes this particular dish, which is a quick-and-easy potato stew with minced pork that comes together in under 30 minutes.

INGREDIENTS

 75 g Minced meat (beef, lean)
 2 ¾ Potatoes
 100 g Chopped tomatoes (canned)
 25 g Strained tomatoes
 5 ½ Garlic cloves
 ¼ Onions (large)
  cup Coriander (chopped)
  tsp Salt
  tsp Black pepper
 ¼ tsp Arabic mixed spice (or All Spice)
  tbsp Sunflower oil
 Sunflower oil
 ¾ cup Water
FOR GARNISH
 Pine seeds (fried)

INSTRUCTIONS

Fry the potatoes until they turn crispy from the outside. The potatoes should not be fully cooked. Make sure the oil is hot and the potatoes are dry before frying.

Fry the chopped onion with half the crushed garlic in some sunflower oil on high heat. The onions should be translucent but be careful not to burn the garlic. Keep stirring while frying.

Add the minced meat, some salt and the mixed spice and black pepper. Fry until the meat changes color (becomes brownish). Keep moving the meat around and separate it into small pieces to avoid clumps. You will notice the meat releases water - don’t let it all evaporate.

Add the chopped tomatoes, strained tomatoes, water and remaining salt. Mix well and bring to a boil.

Add the rest of the crushed garlic and mix, then add the fried potatoes and gently stir. Cover and let simmer on medium heat until the potatoes are cooked (15-20 minutes).

Add the coriander, mix gently and let simmer uncovered for another 5 to 10 minutes. Leave a bit of coriander on the side for garnish when serving.
