INGREDIENTS

 ¼ Cauliflower
 63 g Minced meat (beef, lean)
 ¼ Onions (large)
  cup Coriander (chopped)
 5 ½ Garlic cloves
  tsp Salt
  tsp Black pepper
  tsp Arabic mixed spice (or All Spice)
  tbsp Sunflower oil

INSTRUCTIONS

Heat some sunflower oil in a deep pan on high. Once the oil is very hot, lightly fry the cauliflower - turning the florets so they brown. Once fried, place on a plate with paper towels to soak the excess oil. Note: Don’t deep fry the cauliflower and make sure the florets are very dry before frying.

In a pot, heat the sunflower oil on high and fry the chopped onions until they become translucent. Keep stirring so they don’t burn.

Add the minced meat, black pepper, Arabic mixed spice and some salt. Fry until the meat becomes brown. Keep moving the meat around and separate it into small pieces. Once cooked, put the meat in a bowl but don’t wash the pot.

Now put the fried cauliflower in the pot, and top with the fried minced meat, some crushed garlic and salt. Pour in enough hot water to reach up to half the cauliflower. Cover and bring to a boil on high heat, then lower to medium and let simmer for 10 to 15 minutes.

Add the remaining crushed garlic directly in the broth and top with all the coriander. Continue to simmer uncovered until cooked (about 10 minutes). Note: Do not stir the cauliflower while cooking as it will break apart.
