Mock fried chicken is a dish that is usually made with chicken that has been coated in a breading and then fried. This dish is often made as a healthier alternative to traditional fried chicken.

Bone the chicken.
Remove the skin and discard.
Trim any fat (theyellow stuff).
Cut each breast in half (just cut across, nothingfancy).
Combine the bread crumbs, pepper, seasoning, and milk ona plate.
Place the vermouth on a second plate.
'Swirl' each breastin the vermouth and then roll in the bread crumbs.
Be sure to coverthe breast entirely with bread crumbs.
Place in a shallow baking dish(not necessary to grease) and bake at 400 degrees for 20 minutes.
