Mushroom And Barley Soup Recipe

Ingredients:1 lb. mushrooms, sliced1/2 c. pearl barley1 onion, chopped1 carrot, chopped1 celery stalk, chopped4 c. beef broth1/4 c. dry red wine1 tsp. thymeSalt and pepper to tasteInstructions:1. In a large pot, combine all ingredients.2. Bring to a boil, reduce heat and simmer for 1 hour.3. Serve hot.

 ½ c pearl barley
 4 tb butter
 1 ea clove garlic, minced
 8 c chicken broth
 ½ c finely chopped onion
 ¾ lb mushrooms (4 c.) chopped
 ½ c finely chopped celery
 1 ea salt and white pepper to tas

Soak barley in water overnight.

Saute gfarlic, onion and celery in butteruntil tender.

Drain barley and add to vegetables.

Saute 10 minutes longeruntil barley becomes thick.

Add chicken broth and mushrooms and simmer,covered, until barley is tender (about 1 hour).

Season to taste with saltand pepper.
