A: This recipe is for a side dish that can be made with either sweet potatoes or yams. It calls for the yams to be peeled and cut into bite-sized pieces, then boiled until tender. Once they are done, they are mixed with orange juice, peanut butter, and honey. This dish can be served either warm or cold.

 2 ea Med. Sweet Potatoes
 2 ts Cornstarch
 ¼ ts Finely Shredded Orange Peel
 4 tb Honey Or Maple (flvrd) syrup
 2 tb Orange Juice
 2 tb Peanuts
 ½ c Orange Juice

Peel and slice sweet potatoes crosswise into 1/2-inch thick slices.

Placein a 1-quart casserole.

Sprinkle lightly with salt.

Sprinkle with 2 Torange juice.

Micro-cook, covered, on 100% power for 6 to 8 minutes ortill potatoes are tender.

Let stand, covered, while preparing sauce.

Forsauce, in a 2-cup measure stir together 1/2 c orange juice, cornstarch,and finely shredded orange peel.

Stir in honey or maple (maple-flavored)syrup.

Micro-cook, uncovered, on 100% power for 1 to 2 minutes or tillthickened and bubbly, stirring every 30 seconds.

Stir together sauce andpotato slices.

Sprinkle with roasted but unsalted peanuts.
