Pat’S Zucchini Appetizer Recipe

During summer squash season, these cheesy zucchini patties are a welcome alternative to potato pancakes. Serve with sour cream or tomato sauce on top.

 3 diced unpared zucchini
 1 Bisquick baking mix
 ½ chopped onion
 ½ grated Parmesan cheese
 1 tsp. seasoned salt
 ½ tsp. oregano
 ½ vegetable oil
 4 eggs, slightly beaten

Preheat oven to 350

Grease oblong pan (9x13x2 in

) Mix all ingredients

Spread in pan

Bake until golden brown about 25 minutes

Cut into pieces about 1 x 2 inches
