Peach Fritters (Parshing Ponakucka) Recipe

Peach fritters are a type of fried pastry that is made with a batter that contains flour, sugar, eggs, and milk. The batter is then fried in hot oil until it is golden brown. The fritters are then dipped in a sugar and cinnamon mixture.

 ½ c Sugar
 2 ea Egg, well beaten
  c Butter
 2 c Flour
 3 ts Baking powder
 ½ ts Salt
 1 c Milk
 ½ ts Lemon juice
 ½ ts Vanilla
 1 1/2 c Peaches, chopped
 1 x Whipping cream

May use either fresh or canned peaches.

Cream the butter and sugar, and addthe eggs and beat thoroughly.

Sift the dry ingredients together and addalternately with the milk.

Fold in the peaches, lemon juice and vanilla.

Drop by teaspoonfuls into hot fat and fry until golden brown.

Serve withwhipped cream or sprinkle with powdered sugar.
