Peanut Crusted Baked Chicken Recipe

?This is a recipe for baked chicken that has been coated in a mixture of peanut butter and bread crumbs. The chicken is then baked until it is cooked through and the peanut butter and bread crumbs have formed a crispy crust.

 1 broiling chicken, quartered, about 3 pounds
 1 cup (8 ounces) plain yogurt
 4 tablespoons butter or margarine, melted
 2 teaspoons dried thyme leaves
 ½ teaspoon ground black pepper
 1 to 1 1/4 cups ground dry roasted peanuts
  teaspoon cayenne pepper

1. Wash chicken. Pat dry. Place into a heavy duty plastic bag. Pour yogurt over the chicken. Marinate overnight in refrigerator.

2. Remove chicken from refrigerator. Place on a sheet of waxed paper.

3. Combine the butter, thyme and black pepper. Brush chicken on all sides with the mixture.

4. Combine the ground peanuts and cayenne pepper. Roll chicken pieces in the mixture. Place on a roasting pan.

5. Bake chicken at 350 degrees for 40 to 45 minutes or until chicken is done and liquids run clear when tested.
