Peppermint Meringues (Woman’S Day 12/92) Recipe

Peppermint Meringues are a sweet and minty holiday treat. These meringues are made with peppermint extract and crushed peppermint candies. They are perfect for holiday parties or as a festive holiday dessert.

 2 lg Egg whites, room temp
 ½ c Sugar
  ts Salt
 2 Peppermint candies, crushed
  ts Cream of tartar

Arrange oven racks to divide oven in thirds.

Heat to 225 deg f.

Line twocookie sheets with foil.

In a large bowl, beat egg whites, salt and creamof tartar until peaks appear.

Gradually add sugar and beat at medium speedfor 5 to 6 minutes.

Drop by teaspoonfuls onto cookie sheets.

Sprinkle withcrushed candy.

Bake 1 1/2 hours.

Meringues should look dry and white.

Turnoff oven.

Keep door ajar and let meringues cool.

Loosen from foil withmetal spatula.

Store loosely covered in a dry place.
