Potted herrings in Guinness is a traditional Irish recipe that calls for herrings to be marinated in Guinness beer overnight, then cooked in the same beer the next day. The herrings are then covered in a mixture of Guinness and butter, and left to cool.

 10 ea Filleted fresh herrings
 10 x Cloves
 600 ml Guinness (pref. draft)
 4 x White and black peppercorns
 5 fl Vinegar
 1 x Salt as required
 1 x Onion cut into rings
 1 ts Brown sugar
 2 x Bay leaves

Wash herring fillets and roll up, starting from the tail.

Place in abaking dish and add the stout-and-vinegar mixture.

Add all otheringredients.

Cover with baking parchment or foil and bake in a moderateoven (about 350F) for 20 minutes.

Remove from oven, allow to cool, andserve.
