There is no one definitive recipe for provincale-style pasta sauce, but it typically contains tomatoes, garlic, onions, and herbs. It may also include olives, capers, and anchovies.

2 c Diced tomatoes
¼ c Chopped fresh parsley
½ c Roasted red bell peppers -
8 Olives, kalamata, italian
2 ts Fresh thyme or 1/2 tsp dried
¼ c Olive oil
2 Cloves garlic, minced
1 tb Olive oil
1 ts Capers, drained

Combine all ingredients in a large bowl.

Season to taste with salt andpepper.
