Prune Coffee Cake Recipe

Prune coffee cake is a type of cake that is made with prunes as one of the main ingredients. The cake is often moist and dense, and has a deep flavor that is accented by the sweetness of the prunes. Prune coffee cake is often served as a breakfast cake or as a dessert.

 1 c prunes
 ½ c milk
 2 c flour
  c butter or shortening
 ¾ c sugar
 1 ts cinnamon
 3 ts baking powder
 2 tb brown sugar
 ½ ts salt
 3 tb butter, melted
 1 ea egg

Soak prunes in just enough warm water to cover; set aside.

Mix and sift all dry ingredients.

In a separate bowl, beat egg untillight and fluffy.

Stir in milk and melted butter.

Gradually add thisliquid to flour mixture and combine thoroughly.

Turn into lightly oiled8-inch square baking dish.

Cut soaked prunes into pieces and press downinto dough.

Combine cinnamon, brown sugar and melted butter.

Spread overprunes.

Bake at 350 degrees for 30-40 minutes.
