Qamar Al Deen – Dried Apricot Juice Recipe

The base of the Middle Eastern beverage Qamar Al-deen is dried apricots. It is delicious, sweet, and thick. Next time, give this guava-flavored beverage a try. Middle Easterners love Qamar Al-Deen beverages.

 100 g Apricot paste sheets ('Qamar al Deen' in Arabic)
 1 tsp Pine seeds (raw)
 Sugar (optional)
 1 cup Water
 ½ tsp Orange blossom water ('Mai Zahir' in Arabic)

Cover the apricot squares with half the water (boiled), mix and leave it to melt for about 20 minutes - stir occasionally. Then add the remaining half of the water, also boiled, mix it well and let it sit for another 20 minutes. You can add some sugar while the water is still warm, but make sure to taste the mixture first as apricot paste can be quite sweet on its own. Note: If you're in a hurry, you can dissolve the apricot squares in all the water on the stove.


Sieve the apricot mixture, and mash whatever is left of the paste.


Add the pine seeds and refrigerate.
