Mini Quiche Appetizers are always a hit and are ideal for breakfasts or hors d'oeuvres that can be prepared in advance. Bake these delicious quiches in muffin tins, which are simple to prepare and freeze, and keep them there for months.

INGREDIENTS
INSTRUCTIONS
Preheat oven to 375
Prepare pastry as directed on package
Roll 1/16-inch thick on lightly floured board
Cut into 1 1/2 to 2-inch rounds
Fit rounds into tiny muffin tins
(May need to adjust size to fit tin used
) Combine bacon, cheese and onion
Fill each cup with approximately 1 tablespoon of mixture
Beat eggs slightly
Beat in remaining ingredients
Pour 1 tablespoon of cream mixture into each cup over bacon mixture
Bake at 375
Let cool in pans for 5 minutes before removing
Can also make 1 or 2 days ahead
Wrap in foil and reheat at 350
Makes 36 pieces
