Romaine lettuce with oyster sauce is a popular Chinese dish that is typically served as a side dish or appetizer. The dish is made by stir-frying romaine lettuce in a wok or frying pan with oyster sauce, garlic, and other seasonings. It is usually served with rice or noodles.

Preparation:Wash
Combine oil
Blanching:Heat about 2 gallons water in large pot.
We use bottom ofaluminum steamer.
Add salt.
When water reaches rolling boil, blanchlettuce for about 20 seconds - until leaves are bright green.
Remove leaves, shake off excess water.
Stack leaves
Use cleaver to place leaves on serving platter.
Pour hot oystersauce on leaves.
Serve.
