INGREDIENTS

 125 g Spinach (leaves)
 ¼ cup Coriander (chopped)
 ¾ Onions
 2 ¾ Garlic cloves
  tsp Salt
 Black pepper (to taste)
 1 tbsp Olive oil
FOR GARNISH
 Pomegranate seeds ('Rumman' in Arabic)
 Walnuts (raw, chopped)

INSTRUCTIONS

In a pot on high heat, fry the chopped onion and garlic in the olive oil.

Lower the heat to medium and start adding the spinach. Add a few handfuls at a time and stir until the spinach wilts. Repeat until you’ve added all the spinach. Then add the salt and black pepper and mix. Leave to cook for a few minutes to allow the spinach to release its water.

Once almost cooked, add the chopped coriander and the remaining garlic (leave some coriander on the side for garnish at the end). Mix well and let cook until almost dry. Be careful not to cook for too long otherwise the spinach will go black.

Fry the sliced onions in some olive oil until they are slightly crispy and dark in color. Once done, place them on paper towels to absorb the excess oil.
