Salsa ranchera is a type of salsa made with tomatoes, chili peppers, and onions. It is typically used as a condiment or dipping sauce.

2 tb oil
1 ea pinch of sugar
2 ea tomatoes, peeled and seeded
12 oz can of jalapenos
1 ts salt
1 tb vinegar
2 ts freshly ground black pepper

Rinse and chop the jalapenos.

Heat oil in skillet.

Add tomatoes and cookdown to thick puree.

Season and remove from heat.

Add chiles and vinegar,mix well.

Makes 1 1/2 cups.
