Salatet Adas – Lentil Salad Recipe

On a summer day, or any day for that matter, this salad is a breath of fresh air. Add chopped tomatoes, olives, cucumbers, or feta as a garnish if you like.

 ¼ Tomatoes (optional)
 ¼ Onions
 ¼ Garlic cloves
  cup Parsley (chopped)
 ¼ tsp Cumin (powder)
 ¼ tsp Salt
  tsp Black pepper
  tbsp Olive oil
 ½ tbsp Lemon juice
  cup Lentils (green)

Place the lentils in a pot with some water with half the spices (salt, black pepper and cumin). Cover and bring to a boil on high heat, then let simmer on medium until cooked (about 20 minutes). Once done place the lentils on a sieve to drain and cool down. Note: The lentils should be soft but not mushy. If while boiling you find the water level is too low and the lentils are not cooked, add cold water and continue to simmer.

Put the lentils in a bowl with all the remaining ingredients, leaving some parsley on the side for garnish, and mix.
