Samaket Rula – Rula’S Fish Recipe

The traditional Middle Eastern dish known as Samaket Rula is a classic. This Lebanese variation is incredibly tasty and chock-full of antioxidants.

 380 g Sea bass (whole)
 ¾ Onions (large)
 ¾ Lemon
FOR THE FISH RUB
  tsp Salt
  tbsp Lemon rind
  tsp Black pepper
  tsp Red chili (powder)
 ¼ tsp Yellow mustard
 Sugar (optional)
FOR THE SAUCE
  cup Lemon juice
  cup Olive oil
 ¼ tsp Yellow mustard
  tsp Black pepper
 ¼ tsp Salt
  tsp Red chili (powder)

Lay the cut lemons across the length of an oven safe tray and place the cut onions on either side. Make sure the tray is long enough to fit the whole fish.

Mix all the ingredients together for the fish rub and then rub them very well into the fish – from the outside and inside. If you’d like, you can add a sprinkle of sugar to the mixture. We recommend you use gloves for this step.

Now hold the fish with the slit across the bottom open and stand it over the onions and lemons.

Mix together all the ingredients for the sauce and pour it evenly over the fish. Then cover the tray with aluminum foil, making sure it’s sealed well around the edges of the tray, and put it in the oven to cook (it takes about 40 minutes).
